With 3 days off and not a plan in the world after my baby shower I decided to try to perfect an original pie crust so that I can mass freeze the crust dough and just thaw it for different pies throughout the holiday season. I’m really taking this Susie-Homemaker schtuff seriously.

Flashback to February: cooking on Valentines Day ❤

I've been trying to make a Butter Crust with a hint in something different. I wanna add powder fine cinnamon sugar GrahamCracker to the crust mixture for a "Brittany Graham's Butter-Graham Crust". Making something original from scratch is so much fun, but to perfect a recipe while you're making one up takes some trial and error. First attempt was today for my first ever homemade apple pie, a happy birthday pie for James who loves apple pie. It tasted delicious, but it wasn't as flakey of a crust, I had a hard time molding it. The dough was too crumbley, however I'll post the recipe cause it tasted awesome and it would be delicious with Vanilla Ice Cream.

"First Day of Fall Apple Pie Crumble"

2 sticks unsalted butter
6 finely smashed cinnamon sugar graham crackers
2 cups whole wheat flour
1 tsp. salt
1 tbsp. sugar
1 tsp. cinnamon
1 tbsp. vanilla extract
8 tbsp. ice water

*combine dry ingredients in bowl
*add butter and vanilla extract, beat in with mixer (or pulse it in a food processor if you’re lucky enough to have one)
*slowly add water into butter/flour mixture until dough looks like little pea sized butter balls and sticks together if you pinch it
*place dough on clean surface; mound together til it forms a disc shape
*wrap disc and refrigerate for at least an hour

mind you this recipe came out really crumbly, I think because of the GrahamCracker which added amazing flavor, but next time I’ll add another 1/2 stick of butter and a tad more water

When my dough came out of the fridge I couldn’t roll it out it was so loose, but I refuse to waste Ingredients so I ended up pressing it into my pie pan. Just pushing it in making sure there was dough everywhere and it was worked together.

Then added my apples.
The Apples turned out PERFECT!!

Slice about 10-12 red apples thinly. Red apples have a sweet skin, I chose not to peel mine, that’s about preference though.
Add 1/2 cup whole wheat flour
2 tbsp. ground cinnamon
1 tbsp. vanilla extract
3/4 cup pure cane sugar
1 tsp. nutmeg
1 tsp. allspice

*work all ingredients into apples
*place in pot; simmer on low heat for min 45 min, stirring occasionally

I let them simmer for almost 2 hours, the longer the softer and more flavor infused they become. Also it makes your house smell sooo good!!!

Add apples into pie crust, then since there was no way to make a pie top with my crummy crust dough I just evenly coated the top with the crust dough to make it look like a crumble, sprinkled with cinnamon sugar and baked for 45 min on 350.

It tasted amazing, but cutting the crummy pie was a mess. Will be trying this again soon!
