Scrumptious Sunday #4 Homemade Oreos

I know it sounds really ridiculous but have you ever wanted something specific, and just been too lazy to even dream of putting a bra on, buckling a seatbelt and swiping your debit card at the store? Well, that basically sums up Weeks 38-40 of pregnancy. In the very serious case of last Tuesday oreos were needed and Praise sweet 7lb 9oz little baby Jesus I had everything I needed to make them from scratch in my kitchen, so even though it may have been quicker to go buy them, I was able to still avoid putting on make-up so the elbow grease in the kitchen was worth it. Besides, I tend to feel like if you slaved over the mixing bowl to make it, you’ve earned it and the calories in homemade treats don’t count. (but try telling that to the 50lbs I’ve gained during this pregnancy). Nonetheless they were absolutely delicious so here’s your recipe.

Chocolate Wafers

Ingredients

1 1/4 cups flour

1/2 cup cocoa

1 tsp baking soda

1/4 tsp baking powder

1/4 tsp salt

1 1/2 cups sugar

3/4 cups softened butter

1 large egg

 

1. Mix all dry ingredients together

2. Add butter; mix well

4. Work into ball, freeze for 20 min

5. Roll and flatten dough into circles
6. Bake at 375 for 9 min

Cream
ingredients
1/2 cup butter
1/4 cup olive oil
2 1/4 cups powdered sugar
2 tsp vanilla extract

1. Blend butter and oil

2. Add vanilla extract and slowly mix in powdered sugar until fluffy and clump-less

Assemble the cookie sandwiches!

Grab a glass of chocolate almond milk and go HAM.
