Homemade Red-Skin Mashed Potatoes

Cash hit his 6 month mark the other day, and his doctor encouraged us to start giving him a fruit and vegetable in the morning and in the evening to start the solid food transition. He has a great love for watching us eat, and I have a strong aversion to giving my child anything jarred by Gerber, so I decided to make him some healthy options that would be awesome, and something Mommy and Daddy don’t mind eating. I received a glorious food processor for Christmas, and have been on my Chef-game ever since, however, if you don’t have one this is easily done just by cutting your boiled potatoes in 1/4ths and using a mixer.



1/2 package of baby red skin potatoes

1/4 cup butter

1/4 cup almond milk

1/4 cup sour cream

2 tbsp garlic

salt & pepper to taste

a sprinkle of mozzarella (to make them extra creamy)


1. Boil your baby potatoes for about 10 minutes

2. Cut baby potatoes in 1/2, throw in the food processor with butter, milk, garlic & sour cream

3. Put in serving bowl and mix in a sprinkle of mozz, plus your salt & pepper




There you have it 3 easy steps to food you can enjoy with your little one!!!

Cash LOVED them, and so did I!!! This recipe made about 8 servings altogether, James and I are lo-carbing it, so we really only heat up 2 tbsps each for our servings, but totally worth a little splurge!! 😉
