I’m basically full-on in love with this recipe, and it was incredibly simple. We need healthy easy to go to snacks to keep around the house, I’m really trying to be on a full healthy eating lifestyle before Cash starts picking up on bad eating habits. With that being said, this makes a great option as something we can have on-hand ready to eat, I only have to make one batch and it’ll last for about a week in the fridge!
4 oz fresh basil (like 2 handfuls) – I must stress this recipe only works with FRESH basil)
2 tbsp minced garlic
2 tbsp lemon juice
8 oz pine nuts
1 package of organic heirloom tomatoes
8 oz of fresh mozzarella pearls
1/4 cup EVOO
1. Quarter the tomatoes
2. Mix tomatoes and mozzarella pearls in a large sealed tupperware container
3. put basil, garlic, lemon juice and pine nuts in food processor
4. mix, and slowly pour EVOO in while mixing
5. Put on top of tomatoes & mozzarella, mix well
This is also great on top of grilled chicken, baby spring greens, toasted bread…it’s awesome!
