I’ve seen a TON of people on my Instagram news feed already putting up their Christmas decor, noticed that Music On Demand has their Christmas Music channel up and running already, and in the drug store the other day, red and green M&M’s were already on the shelf. It’s not even Thanksgiving yet, but I can SO get on board with the hurry to get to Christmas! Inspired by these seasonal signs I decided to make something scrumptious and totally seasonally appropriate. These cookies will be awesome to make for an upcoming holiday party, a secret santa surprise, or even just a special treat for your family. Holiday Oreo’s are my favorite, something about the food coloring in the creme filling gets me all excited, like a 5 year old, and since I’m currently not really eating processed foods, I wanted to make some from scratch!
Nielsen-Massey offers a wide variety of flavored pure extracts. A small amount of pure flavor extract adds an extra “umph” to your recipe, while being conveniently easy to use. And, you can trust it will taste delicious every time, because their extract company has been crafting the finest vanilla and other flavors since 1907. Additionally, all their products are Gluten-Free, Allergen-Free, GMO-Free and Kosher.
For this recipe I used Nielsen-Massey Peppermint Extract and Chocolate Extract.
1 1/4 cups flour
1/2 cup cocoa
1 tsp baking soda
1 tsp Neilsen-Massey Pure Chocolate Extract
1/4 tsp baking powder
1/4 tsp salt
1 1/2 cups sugar
3/4 cups softened butter
1 large egg
1. Mix all dry ingredients together
2. Add butter; mix well
3. Add egg and extract; mix well
4. Work into ball, freeze for 20 min
5. Work and flatten dough into circles (or use a holiday-themed cookie cutter like I did)
6. Bake at 375 for 9 minutes
1/2 cup butter
1 tsp Neilsen-Massey Pure Madagascar vanilla extract
1 tsp Neilsen-Massey Peppermint Extract
1/4 cup olive oil
2 1/4 cups powdered sugar
1. Blend butter and oil
2. Add vanilla & peppermint extract and slowly mix in powdered sugar until fluffy and clump-less
3. Assemble cookie sandwiches!
