James and I have been on a weight loss journey. We don’t like to consider this a “diet” as it’s more of a permanent lifestyle change. Since the end of April, James has lost 25lbs and I’m down 30! We’ve been really working the low-carb lifestyle for a while, and more recently fell in love with juicing and vegan living. We’re more 80% vegan as we still have grilled chicken and cheese with about 3-5 meals a week. We’ve learned that no matter what it is we are putting in our bodies, we want it to be beneficial in some way or another. So, when looking for a way to satisfy my sweet tooth recently, we came up with our own vegan chocolate chip cookie recipe that has NO sugar or artificial sweeteners! James made his own almond milk to go with our vegan cookies, and this snack was a wonderful success!
1 cup almond meal
1 cup ground flax seed
1/2 cup melted coconut oil
1/2 cup ground coconut
1 tsp baking soda
3 tbsp organic unsweetened applesauce
1/4 cup vegan chocolate chips
- Combine all ingredients in big bowl, stir until well mixed.
- Bake for 15 min in oven on 350
- Allow to cool and enjoy!
This was such a simple recipe, and I can’t stress enough how delicious they were! They have the texture of a granola bar, which makes them all the more satisfying and filling. Between the coconut oil, flax seed, and almond meal, you boost your energy levels with tons of good fats, omega-3’s, and antioxidants!
My stepfather was really skeptical and completely uninterested in trying my “hippie” cookies, but after reluctantly tasting one, he ended up eating 5! Try this out at home, and you can even safely lick the spoon without risking salmonella! Better yet, wash the kiddo’s hands and let them get some sensory play in and mix the dough for you!
